I think canning is great. I do a lot of canning this time of year especially squash and tomatoes. Please note that there is a difference in the type of canning used for the two products. Nonacidic foods must be canned in a pressure canner otherwise you will get very sick. Many Fruits and Acidic foods like tomatoes can be canned using a hot bath technique.
